World Cup Healthy Recipes
It has been competition time with our healthy recipe section in the newsletter and, to mark the World Cup, we are asking for recipes with a world cup/summer theme. Our caterers, Edwards and Ward, are awarding footballs to the first ten entries which we have featured below:
Arthur's Prawnless Jambalaya

6oz cooked rice (you can use brown rice) 5oz chorizo sausage 1/2 red pepper chopped 1/2 yellow pepper chopped 2 cloves of garlic 2oz sweetcorn 1 onion chopped 1 tbsp tomato puree 1 tbsp olive oil 2oz frozen peas |
In a large pan cook the chorizo in the oil for 5 minutes. Add the onion, peppers and garlic and cook for another 5 minutes.
Stir in 2 tbsp of water and the tomato puree.
Finally add the peas and sweetcorn for a further 4 minutes together with a little pepper.
Serve immediately but it can also be eaten chilled. |
